Shed Kitchen: Banana Blueberry Oatmeal

by Rachel on 04/02/2010

Good morning! And happy F*ck Calories Friday to any of you who will be celebrating the holiday today!! (That, my friends, is a real Good Friday.) I’m assuming many of you are reading this from bed and not your desk, so I thought I’d share a good recipe for your morning out of the office.

A few weeks ago, I discovered dried blueberries and set out on a mission to create a bowl of oatmeal that was something like a blueberry muffin. And oh yeah…I did it.

  • 3/4 cup dry oatmeal, prepared in 1 cup + 1 tbsp of water

Once the oatmeal is prepared to your level of chew, add…

  • 1 fronana, thawed (you can thaw it in the microwave, if necessary)
  • 2 tbsp dried blueberries
  • 1 tbsp milk
  • 1 tbsp macadamia nuts
  • 1/2 tbsp butterscotch
  • 1 tsp white chocolate chips
  • 1 tsp brown sugar

So great! The thawed frozen banana is the way to go; it really gives the whole bowl of oatmeal a nice, authentic banana flavor. And dried blueberries are so great! Despite being dried, they are really juicy and seem to burst with flavor. The macadamia nuts were a good way to mix it up, but I’ve also made it with walnuts, and that was pretty baller too.

Pimpin’ ain’t easy…except when it comes to whole grains!

HAHA I love Pimp Quaker! Those oats sound amazing, especially with macadamia nuts. Makes me sad that my stomach can’t handle oats, I miss them.
