Good evening, everybody!
Tonight I had a spin class to teach. I didn’t teach all last week; class was canceled due to snow and lack of hustle. But tonight I was raring to get back in the saddle. Before class I did Core Fusion and then did the first day of the 100 Push-Ups Challenge! Not too bad today!
I made a semi-new playlist for class by just swapping out some of the old songs and adding in new ones. Because I was in a good mood, it was a super upbeat playlist…think “Hey Ya!” and “Single Ladies.” I was also in the mood to go fast. Most of the time, I take a “Get in, get off, get out” approach to exercise, and tonight was no exception!
As I was running out the door I paused to hack up my organic delivery eggplant to have with dinner. I have never made eggplant before and since I didn’t have time to come up with a great recipe for it and get extra ingredients, I decided to just roast it as a side. I followed the directions in The Art of Simple Food. Well, that’s not true. All I did was cut the thing.

Then I left my mother the directions from The Art of Simple Food. Which were: salt it generously and let it sit for a few minutes; toss it with olive oil; bake for 20-35 minutes at 400 degrees. Simple indeed!
Then I was off to class! I was in a great mood. The sun was shining bright and it was so nice compared to the weather we’ve been having! But…I don’t want to get my hopes up. Spring in Michigan is like a drunk guy — you don’t think it’s ever going to come.
Still, the sunshine made everyone cheery. I was feeling extra cheery as I added in some power sprints throughout. Heh…but seriously, we were there, we were sweaty….we were going to go to work! I like morning workouts, but I love evening ones because I usually just have more energy.
The new playlist made class absolutely fly by! We had a great ride, finished with a sprint to a remix of “Tainted Love,” and before I knew it, I was on my way home to a lovely dinner of grilled chicken, couscous, and roasted eggplant!

Right after the eggplant came out of the oven, I rubbed it with a whole garlic clove to give it some extra flavor, and that was really all it needed. This is why I love doing the grocery delivery thing — new veggies on my plate!
Now I’ve got places to go and people to see…and by “places” I mean “Facebook” and by “people” I mean “G-mail and G-chat contacts.”

I’m busy “seeing” all my people too (on FB) and giving updates on the bad porn also known as The Bachelor. Lol! Can’t wait to take spin class – hope they’ve got a hip instructor like you.

Spring in Michigan is like a drunk guy … HAHAHAHAHAHAHAHAHA. I’m eating eggplant right now! It’s my favorite vegetable, along with cauliflower. Tonight, I roasted it in Ginger Sesame Teriyaki and Wasabi sauce!

I LOVE cauliflower but I really need to get in on roasting it. I am not an experienced roaster because I used to be afraid of olive oil. #FAIL
Wow…spring in Iowa is totally like a drunk guy too, and I’m sooooo stealing that line! I need to stop reading your blog at my desk…I’m sure my co-workers all think I’m a looney tune every time I just randomly bust out laughing…..this time even included a snort–there’s a badge of honor for ya

Your blog just cracks me up! I think I “see” most people on Facebook now. Oh wow, I remember when I use to have real, live, in your face conversations instead of pseudo stalking people I used to know.

Suggestion for eggplant use: Cut in to small cubes and cook with lean ground meat or turkey burger and and it to spaghetti and your favorite sauce! That’s what i did the first time i made it, it was lovely
