Meatless Monday: Spicy Buffalo Wings

When I was grocery shopping last week, I decided it was time to add a few new products to my life. I tend to stick to the same foods most of the time and I forget to branch out. So I decided I would add a new meatless meal! With the super bowl coming up, I decided to go with the Morningstar Farms Buffalo Wings.

I try not to buy a ton of processed meatless products, but one thing I like about them is that they are often really good for fixing a junk food craving. Case in point: these are great for when you need a chicken nugget fix! I say chicken nugget because they really didn’t taste like buffalo wings to me…they tasted like spicy chicken nuggets.

I made them into a hearty, healthy meal by making some peas and corn (Green Giant single serve veggies, also from the freezer) and heating up a sweet potato in the microwave. It was pretty much a meatless TV dinner!

The nuggets were good with spicy brown mustard and ketchup! They reminded me a little bit of Wendy’s chicken nuggets. I really just like having some different freezer options, and this is a dece one.

The Morningstar Farms Web site also has some recipes for the wings, and I really like the wing wrap recipe! To make one: microwave the wings and slice them up. Then mix together a tablespoon of low-fat sour cream and a tablespoon of taco seasoning mix. Spread the sour cream mixture in a tortilla and top with the wings, 1/4 cup of shredded Mexican cheese, chopped tomatoes, lettuce, and sliced green onions. It’s like a spicy chicken taco…YUM!

Five wings has 220 calories, 8 grams of fat (only 1 g saturated), 20 g carbs, 3 g fiber, and 12 g protein. The sodium is higher than I’d like, so I wouldn’t make this a daily meal, but sometimes vegetarian “junk food” works for a treat!

I am not sure if you have ever tried them, but Trader Joe’s Veggie Masala Burgers are delicious. I found them with other veggie burgers at the store. Here is a picture of the box: http://www.traderjoesfan.com/Trader_Joes/vegetable_masala_burger/details/
Generally, it is not very difficult to make these at home, and their yumminess comes from the usage of potato as a binding agent instead of soy. And as an Indian myself, I just cannot get enough of their curry/masala flavor.

i love those! i just recently started having them as well, and they really are a good treat :) the regular ones (not spicy) are a little ehh, and the tenders are a little eh, but these ones and a little fat free honey mustard make a terrific friday night treat !
