Rise and Dine: Sweet Potato Hash Browns

After all that talk about hash browns yesterday, a healthier hash brown recipe seemed to be in order! I mean, some days you just don’t qualify for the McDonald’s breakfast.

I love hash browns. I love all potatoes, but the saltier and crispier, the better. I do love sweet potatoes, so I can get behind this compromise, inspired by a recipe on Care2.com.

Ingredients (Serves Two)

One large sweet potato, peeled

1/2 cup chopped onion

1 tsp minced garlic

1 tsp olive oil

Salt and pepper to taste

This Is How We Do It

Shred the sweet potato using a grater.

(This is the most unpleasant task in the world to me, but I’ll do anything for some hash…)

Heat the oil in a skillet and add the onions, cooking until soft, about five minutes. Then add the sweet potato shreds and garlic.

You can form the shreds into patties and brown on each side, or you can keep them loose, which is what I did. Cook for about 10 minutes, until they are browned and crispy. Oh and salt and peppa that shizzzzz!

While they were cooking, I scrambled and egg and made some bacon!

Seriously…these surprised me! They are obviously a little sweeter than regular hash browns, but the salt, pepper, garlic, and onion makes them savory enough to satisfy a brunchtime carb craving. And sweet potatoes are nutritional powerhouses so you can feel really good about incorporating them into your first meal of the day…although these hash browns are legit any time!

Ummm can you make breakfast for me?!? I am the worse breakfast cook ever, however I can make and bake anything else.

OMG yum. I love sweet potato fries and hash browns, so combining the two would be heaven. I can’t wait to try this out.

I used to make breakfast burritos with diced sweet potato,egg, onion, peppers, alittle cheese and salsa. They were So good! So I’m sure these would be too!
