
This recipe comes from Prevention Magazine…which I had no idea we even got! Oh well…I dig. These little cookies are fat-free, super easy to make, and are rich and chocolatey. Ballin’!
Ingredients
1/2 c unsweetened cocoa powder
Pinch of salt
1/2 cup sugar, divided
3 large egg whites
1/8 tsp cream of tartar
1 tsp vanilla extract
1 tbsp powdered sugar
This Is How We Do It
Preheat oven to 300. Line two baking sheets with foil. In a small bowl, sift together cocoa, salt, and 1/4 cup of the sugar.

In a large bowl, with an electric mixer at medium-low speed, beat the egg whites and cream of tartar until soft peaks form.

Beat in remaining 1/4 cup of sugar, 1/2 tablespoon at a time. The egg whites will become glossy and stiff peaks will form.

(This takes a while, probably 10 minutes at least…beating egg whites is when I am most happy to have Betty!)
Fold in the cocoa mixture and vanilla extract.

You need to stir this really well…seriously, it takes a few minutes to get all the cocoa to blend in. The consistency will be more like frosting when it’s ready.

Drop by rounded teaspoonfuls onto the baking sheets.

For soft, chewy cookies, bake for 25 minutes.

(For crisp cookies, bake for 40 minutes.)
Let cool and then dust with powdered sugar.

I probably shouldn’t tell you this because I don’t need to give you an excuse to eat the whole batch, but each cookie has just 25 calories! So…you can eat four and say a nice hearty “Fuck you!” to your shitty 100-calorie packs with pretend Oreos. This is also 100 calories…but it’s baked with love.

LOVE this recipe! I haven’t made it yet, but its been in my to-do cooking file for a while now. And I am glad that someone else thinks those 100 calories packs taste like fake cookies. Love your blog, can’t wait to read more.
