
When I saw this recipe in the weekly Meatless Monday newsletter, I knew I was making it ASAP. I love fried rice, I love curry, I love eggs, I love apples, I love garlic and onions…instant boner. I don’t even wanna talk about it.
Ingredients (Makes 2 Servings)
1 cup uncooked brown rice
1 cup vegetable broth
2 eggs, scrambled
1 and 1/2 cups frozen vegetables
1/2 white onion, chopped
1 apple, chopped with skin on
1 glove garlic, minced
1 tbsp olive oil
3/4 tbsp curry powder
1/2 tbsp ground cumin
2 tbsp chopped peanuts or cashews
Optional: crushed red pepper flakes (if you like it HOT)
This Is How We Do It
Cook rice according to package directions, using vegetable broth instead of water.
Meanwhile, preheat a pan over medium-high heat. Add olive oil, then add onions and frozen vegetables and cook for about 5 minutes.

Add apples and garlic and cook for 2-3 minutes, or until garlic begins to color.

(I also added some fresh broccoli at this point because…why not?) Add rice, eggs, curry powder, and cumin. Cook for 2 more minutes.

Top with nuts, salt to taste, and crushed red pepper flakes.

EAT IT, GIRL!
Why I love this meal:
1. It tastes good.
2. It is CHEAP to prepare. The bag of frozen veggies I bought cost $1. ONE DOLLAR! And apples, eggs, and rice are also super cheap.
3. On any given day, you probably have everything in your pantry you need to make it.
4. You can easily re-heat the leftovers.
5. It takes less time to make than it does to flip through a take-out menu, decide what to order, and wait for the delivery man. Oh, and it costs about 1/5th of the price of take-out and it’s a hell of a lot healthier.
6. It is super filling! The veggies really bulk it up, so you have a TON of food for not a ton of calories.
7. You can easily make a single portion just for yourself.
8. No meat…no problem. Like the chicken in chicken-fried rice is all that spectacular anyway!
Next time I make this, though, I’m making it with pineapple, which is my favorite fruit. And by “next time,” I mean “tomorrow” because I loved it that much.

Just wanted to let you know, I made this tonight! Frozen veggies are CARISIMO (very expensive) on my side of the world, so I chopped the fresh ones, and ended up with a ton! But it does make for great leftovers, so no complaints!
