Gooood afternoon!
The beginning of this week is SO packed for me, it’s crazy! I mentioned a few weeks ago that I had an interview to teach spinning. Well, the interview went great, so I was invited back to teach a sort of “audition” class. I have been working on getting everything ready for the class because I really want the position! I would be teaching small classes to a personal trainer’s clients, with the possibility of teaching classes to the public as time goes on. Everything about it makes me excited, so I have been working hard to come up with a perfect playlist and workout. I am now satisfied with the tunes, but I am trying to really learn the routine so that I have the cuing down perfectly. When you’re teaching, you really have to concentrate and focus on the music so you don’t miss cues — along with spinning, watching the students to make sure they are OK, and talking and engaging the class!
This morning I practiced at my gym, so I got a good 45 minute workout in! I was really feeling a few of the songs and just having a great time…I hope the clients feel the same way! I am super excited to teach tomorrow…but also really nervous!!
After the workout, I came home and got cleaned up and then got to work on The Spartanette Project. My goal is to finish the book by February and um…that’s not too far away! I thought I’d have more time after the marathon, but other stuff keeps getting in the way. I hate trying to work on it for just a little bit at a time — once I start, I want to do it for hours — but I squeezed in 90 minutes of editing this morning, knowing it was better than nothing. I ended up getting through about 8,000 words! That’s a little less than half of this last section, so that’s a healthy chunk! I feel a lot better about it now.
I finally dragged myself away to get on with my day and have lunch! I would have had a salad but I don’t have 20 minutes to spend chopping veggies. Next week I need to pre-cut everything on Sunday and make my own salad bar…I can’t deal with chopping every day! Today I realized I had everything I needed to make a healthy club sandwich. I had it open-faced with whole-wheat bread, a dab of mayo (I don’t LOVE mayo, but it’s essential to a good club), lettuce, tomato, turkey, and a slice of bacon. God…a slice of bacon is the best way to make a typical sandwich taste DELICIOUS. At the last minute I was delighted to discover a ripe avocado!! Avocado takes anything from good to great, but on a club, it’s totally foodgasmic.

This sandwich was SO good and totally reminded me why I went back to eating meat.
I also relented and chopped up some produce. With my sandwich I had carrots, celery, jicama, and a yellow pepper. Then I made a fruit salad with half a pear, a few strawberries, and a few grapes!

Now it’s time for a little non-Spartanette work and then I’m doing the CF Challenge! Then I have to shower because I am having dinner/drinks with Jacki and a friend we haven’t seen since grade school. I’m going to take it easy on the drinks so I can come home and get more writing and editing done. Now that I’m going again, I’m feeling super passionate and just want to keep rolling on it!
