Hump Day Treat: Superfood Cookies

In keeping with the afore-mentioned superfoods from “Health” magazine, I thought I’d make the recipe they included that incorporates some of the superfoods. They call it “America’s Healthiest Cookie.” Works for me!

Ingredients

6 tbsp unsalted butter

3/4 cup packed light brown sugar

1/3 cup all-purpose flour

1/3 cup whole-wheat flour

3/4 tsp baking soda

1 and 1/2 cups old-fashioned oats

1/2 tsp salt

1 egg, lightly beaten

1 tsp vanilla extract

1/2 cup chopped walnuts

1/2 cup dark chocolate chips or coarsely chopped dark chocolate

This Is How We Do It

Preheat the oven to 350.

Combine flours, baking soda, oats, and salt.

Melt the butter and add the brown sugar, stirring until smooth.

Combine the butter mixture with the flour and oat mixture, and add the egg and vanilla.

Fold in the nuts and chocolate.

Mix well and then spoon onto a baking sheet. (I found that this wasn’t a very wet batter, and it actually worked better for me to just use my hands to form the dough into balls.)

Bake for 10-12 minutes, until the tops are dry to the touch.

SERVE!

These cookies taste like really hearty chocolate chip cookies — albeit a bit more grown-up — but the ingredients are packing serious nutrition! And I love the fact that if you make them, you’ll either use the healthy stuff you already have on hand…or you’ll buy the superfoods you WANT to have on hand! Now you have no excuse not to make oatmeal more often!

Ok, I’m loving this recipe! The fact that cookies are my go-to sweet whenever I have a craving, I now know what to make and won’t hate myself afterwards! Haha, thank you for sharing this!!

Ive been hearing about these cookies alot lately, so when i saw your recipe (just found your blog last week, LOVE IT) i decided to make them tonight. They are awesome! Only problem is, trying to only eat 1-2 at a time :) I look forward to making banana split oatmeal tomorrow morning!
