Hump Day Treat: Betty’s First Bake!

Well, for Betty’s inaugural bake, it made perfect sense to go with a retro recipe. These cookies are perfect; like my mixer’s namesake Betty Draper, they are white, classy, and carrying a little secret!

The recipe is actually from a 1962 issue of Gourmet magazine (I told you I love vintage cookbooks!) and it’s pretty fantastic. I made it last year for the holidays and it was a big hit. I don’t normally love sugar cookies, but the secret ingredient here provides exactly what they need: they are much chewier and moister than your average sugar cookie. Love, love, love!

Ingredients

1/2 cup butter, softened

1/4 cup cottage cheese

1 cup sugar

1 tsp vanilla

1 egg

2 cups flour

1/2 tsp baking soda

1/2 tsp salt

This is How We Do It

Preheat oven to 375 degrees.

Cream together the butter and cottage cheese.

Add the egg, sugar, and vanilla.

Blend thoroughly!

(It was at this point I started to cheer, “Go, Betty, go!”)

Next add the flour, soda, and salt.

Mix it again! The dough will get pretty thick and sticky. Betty had to kick it up a notch to deal.

Drop the dough in teaspoons on a sprayed cooking sheet.

Bake for 10 minutes; the cookies should be fluffy and golden.

You should be feeling fabulously retro at this point, like a character straight out of “Mad Men!”

Enjoy the cookies with a cold glass of milk (and maybe a Lucky Strike)!

I had forgotten what a standout recipe this was! Simple, fast, impressive…my favorite kind of recipe all-around!

And, well, as for Betty…AHHHH!!!! It’s so exciting to use a stand mixer for the first time when you’ve been using a hand mixer for your entire life! It’s like you stand back and let this amazing machine do the work for you! It’s strange not to be in there, mixing, working it, resting the beaters precariously so you don’t get batter everywhere…but I like it!

I can’t wait to see what else you make with Betty. I have a kitchenaid mixer, too, but have only used it once. I think you’re going to motivate me to use it a little more often :)
