I think it would work without the lamb; I'd probably just add more chickpeas, or maybe do chickpeas and cannelini beans to mix it up a little!

Ok, I think I need to emphasize how f-ing good this stew is, although words probably can't do it justice. When we walked in the door to my apartment, it was this wonderful Mediterranean aroma - the lemon zest, the tomatoes, the meat. All of the ingredients (surprisingly) went really well together and each spoonful was extremely satisfying. If anything, we could have used a little more broth to balance out all of the hearty ingredients and being a little less healthy than Rachel, I would have added a little more salt some where in there to bring out even more flavor because we ended up salting/peppering at the end anyway. In short, MAKE THIS STEW!
