Hump Day Treat: Monster Cookies

Woo woo! It’s Hump Day….you know what that means!

This week’s treat is actually a recipe I am using for my Halloween party on Friday. I love these cookies, but I had never made them before. They include butterscotch and sweetened coconut, pretty much a no-fail combo in my book (and mouth). I have been thinking about them for a while, but when I realized I could make them more Halloweenish, I knew it was time.

Ingredients

(Makes about 50 cookies)

1 cup softened butter

3/4 cup sugar

3/4 cup light brown sugar

1 tsp vanilla

2 eggs

2 and 1/4 cup flour

1 tsp baking soda

1/2 tsp salt

1 cup coconut

1/2 cup chocolate chips

1/2 cup butterscotch chips

1/2 cup oatmeal

1 cup Halloween M & Ms

This is How We Do It

Preheat oven to 375.

Combine butter, sugars, vanilla, and eggs.

When I saw this, I knew why these cookies are so good. I mean really. Two sticks of butter!? Treat indeed.

Cream everything until fluffy.

Add flour, baking soda, and salt to creamed mixture.

Beat well. Add the coconut, chocolate chips, butterscotch chips, and oatmeal.

Again…wow! Mix all the treats in. Then bust out the candy!

Drop the cookies onto the baking sheets. I made them pretty small because I wanted them to be bite-sized. In reality, the first batch blew up huge and I had a cookie blanket. So, keep them small and give them their space! Top with M & Ms.

Bake for 8 to 10 minutes.

Ballin’! I made these in four batches, and, honestly, they all came out more crunchy than chewy. If crunchy cookies aren’t your fave, you may not like them. But they are cute and even though I usually try to make softer cookies, these are quite tasty! Coconut and two sticks of butter have that effect.

That video was too awesome. Especially watching what others were doing in the background. I need a job like that. Crawling on your desk and making music videos? Count me in!
