Delightful Indeed!

Last week, my mom bought the new Daily Delights from Yoplait in a few of the different flavors. I was in the mood for something creamy one night and tried it; I love lemon dessert! My mom hated the lemon torte flavor…but I loved it! It’s not something I’d eat every day (it has Splenda, which I really try to limit), but it’s not the worst treat on the planet.

I’m still on my yogurt for lunch kick, but when I went to make it yesterday…the cupboard was bare! Then I found two lemon torte Daily Delights in the back of the fridge. Call me crazy, but I didn’t think a double serving of Daily Delight was the best basis for lunch…but then I had an idea! I mixed one of the Delights with four ounces of plain fat-free Okios. I was worried that the Okios would be way too sour and that a disaster would result; it’s amazing how inspired you can be and the risks you’ll take when you’re about to gnaw off your own arm.

So I mixed them together and took a taste and…wow! It worked! Then I added Trader Joe’s low-fat granola and sliced strawberries.

Um…total perfection! I know Greek yogurt is great, but it’s so sour, that sometimes it can be hard to work with. This was like a lemon cream pie.

This Trader Joe’s granola keeps winning me over more and more, and the sweet vanilla crunch really works perfectly with the lemon. Plus, with the addition of the Greek yogurt, it was a totally filling lunch (or breakfast). Are all great food combinations created in moments of desperation and hunger? I kind of think so!

I think this is genius. And, you’re right…you just can’t mix everything with greek yogurt…it is…um…special.

I had a cup of black bean soup for lunch today (not the homemade kind, mind you, the kind you buy in the grocery store in a cup…yes, I’m hanging my head in shame). To give it a little makeover, I tossed in a little guac and salsa. Worked like a champ!

ironically i find greek yogurt to be completely tasty (versus regular yogurt) — i usually just add a little honey, i added a whole lot of blue berries, and a couple graham crackers for crunch, and that was my dinner last night! i got home late, and didn’t want something too fullfilling! i cannot eat anything with fake sugar, i’m repulsed.

Lately I’ve been having a love affair with graham crackers!! And eating breakfast at all hours of the day!
