Sometimes making a great dinner can be as simple as putting a new twist on an old thing. Turkey burgers are nothing wildly creative or exciting, but this is a great way to upgrade them!
Ingredients
(Serves Four)
One pound lean, fat-free ground turkey
Four tablespoons refrigerated pesto (I used Buitoni)
Whole wheat hamburger buns
Four tablespoons Parmesan cheese
Tomato, sliced
Method
Shape the turkey into four patties, season with salt and pepper, and grill or cook on stovetop until no longer pink in the middle.
Heat the pesto in the microwave for about 45 seconds, or until warm. Stir thoroughly so the olive oil is mixed in.
Top each bun with a tablespoon of pesto, a tablespoon of cheese, and tomato and eat!

This took about 15 minutes from start to finish and was so yummy. While the burgers were on the grill, I made steamed broccoli to go with it. I’m not a huge fan of turkey burgers when they are meant to taste like hamburgers, but in this case, it’s perfect. The white meat tastes great with pesto.
And can we just talk about pesto?! Um, it’s delicious. People tend to avoid it because it’s high in fat. Well, when you serve it on pasta, you need/want a much larger serving, so yes, it can be a little bit of a calorie mishap. But when you eat it on the burger, a little goes a long way! (The tablespoon has around 50 calories and healthy fat from the olive oil.) I can definitely handle making this recipe more often to get my pesto fix in an easy weeknight way!

I love the idea of pesto on pizza. I’m sure I could make a go of that….I have a cauliflower pizza crust recipe that will work nicely with a pesto sauce. It brings new meaning to the term “veggie lovers pizza.”
