Hump Day Treat: 007 Cookies

For this week’s Hump Day Treat, I wanted something sneaky, but healthy…like James Bond, if he used condoms.

For that, I turned to Jessica Seinfeld’s cookbook Deceptively Delicious. It’s meant to help the little ones eat healthier, but I figured, hey, why not? I have childish taste. I might be 24, but there are times when a frozen-pizza-chicken-nugget-baby-carrots diet seems right with me (especially when I see “French Toast Sticks” on Preston’s school menu).

In these cookies, the hidden ingredient is one near and dear to my heart: chickpeas! There’s enough chocolate, butter, and sugar in there to make it necessary to state that these aren’t your mom’s SnackWells. But I always say, if you’re going to indulge, indulge with something you made yourself…that also happens to contain chickpeas!

Ingredients

1 cup firmly packed light or dark brown sugar

3/4 cup trans fat free soft tub margarine spread or butter

2 large egg whites

2 teaspoons pure vanilla extract

One 15-ounce can low-sodium chickpeas drained and rinsed

2 cups semisweet chocolate chips

2 cups all purpose flour

1/2 cup old fashioned oats

1 teaspoon baking soda

1/4 teaspoon salt

Method

Preheat oven to 350.

Beat together the sugar and margarine until smooth. (This is my fave part of baking!)

Beat in the egg whites or egg and vanilla, then add the chickpeas and chocolate chips.

How disconcerting is that image!? It’s like if James Bond had had a threesome in “Die Another Day” with Halle Berry and Judi Dench. At this point in baking, I freaked out a bit and decided I wanted to break up the chickpeas, so I put a bunch of the batter into the Magic Bullet and tried to make it smoother. It was not necessary. You can mash them a bit with a fork, but really, it’s fine. They can go in there whole. Trust me.

Next add the flour, oats, baking soda, and salt and mix on low until a thick dough forms.

Spoon batter onto the baking sheet, about a tablespoon for each cookie. Flatten with the back of a fork.

Bake for 11-13 minutes — do not overbake!

Let them cool, but, well….definitely eat one before it’s cool. Melty = good.

These are so delicious! I had everyone try them and declare them amazing before I dropped the chickpea bombshell. No one could tell! (My mom kept saying they tasted “really good and very springy….almost like cake.” Then it occurred to me that Oh yeah I ran out of white flour and subbed in cake flour. She’s wily, that one, but she still didn’t guess there were chickpeas!) Even Preston came barging into my room at 7 AM to thank me for putting one in his lunch. He’s 5 — that is a win!

My only caveat is that the chickpeas add a lot of fiber. If you’re prone to eating three or four cookies in a sitting (hey, no judgments!), keep in mind that you’re taking in a good amount of beans right there. You may want to consider the fact you could go from Agent 007 to Agent Silent-but-Deadly.

But definitely give this recipe a try! Stealthy is healthy, baby.

I just got this book and I was planning on using it for me too, even though it is for kids!! I have not dug into it yet, I will have to try! This looks great!!

I’ve had this cookbook since it came out and I haven’t made a thing in it yet! What is wrong with me!?

I’m going to dust off the cookbook and breakout some chickpeas and try these bad boys. I have to admit, I’m glad you gave them a test run first. ;-)

The first line of this post was kind of the best thing ever! I have been nervous to jump on the bean baking bandwagon, but maybe i will have to give it a shot.
