You don’t need me to tell you that oatmeal –real, old-fashioned oats– is an amazing food. Low in fat, high in fiber, satisfying, comforting, blah, blah, blah. You get it!
But as fantastic as oatmeal is, sometimes it gets, well, boring. Vanilla, peanut butter, brown sugar, milk…blah, blah, blah! That’s yummy, don’t get me wrong, but it’s just so predictable. Oats are so versatile, it’s a waste not to experiment a bit more!
So, experiment I did! This recipe was inspired by a post of Emma’s over at Veggie Booty. She made a version of tropical oats, I shared my ideas via comments, we discussed, I bought supplies, the kiwi began to ferment while I waited on making it…but I finally got it right!
Ingredients
1/2 cup old-fashioned oats
2/3 cup light coconut milk
1/3 cup water
15 pistachios, shelled
2 tbsp dried pineapple, chopped
Small kiwi, sliced and diced
Pinch of cinnamon
Optional: shredded unsweetened coconut, banana
Step 1: Put water and coconut milk in a small saucepan and bring to a boil. Add oats and cook according to package directions.
Step 2: Stir in kiwi, pineapple, pistachios, and cinnamon. Garnish with shredded coconut and sliced banana.

Damn. Not your typical bowl of oats!
OK first, oats are typically sweet. These oats are definitely salty. It’s different, but I liked it! There is still sweetness from the pineapple — and, um dried pineapple might, in fact, be the greatest thing that’s happened to me in a long time — but the pistachios really up the salt factor. The kiwi adds a nice tart, sour flavor. And despite the coconut milk, it doesn’t actually taste like a bottle of suntan lotion. Think about how coconut milk is the basis in curry — it’s more like that.
While this is a great breakfast, I think it would actually make a phenomenal dinner! It’s good for those nights when you’re eating alone and being a twentysomething girl. You know…I’m talking about the nights when you’re perfectly content to mindlessly eat Lucky Charms during reruns of “That 70s Show.” Hey, it happens — so keep Kelso, ditch the marshmallows, and upgrade to an oatmeal oasis!

I am a huge oats fan so I will be trying this recipe!
I can eat oats straight out of the canister. My other favorite way is to mix in some dark chocolate baking cocoa and a little splenda or stevia. It tastes like a big fat cheat meal, but isn’t.

Regular pineapple is my fave! I don’t know why I never tried it dried. SO good.
