Pumpkin Up: Homemade Pumpkin Latte

My pumpkin latte yesterday was great, but it was also $5. Umm…Starbucks is great, but come on. That’s when I say, “Buck off.” I knew I could figure this out on my own.

And I did! So here ya go.

Pumpkin Latte

Serves One (YOU!)

1/2 cup of brewed coffee

1/2 cup vanilla soy milk, hemp milk, almond milk, or skim milk (So. Many. OPTIONS!)

2 tbsp canned pumpkin

1/2 tsp pumpkin pie spice

1 tsp sugar-free Hazelnut creamer (optional)

Combine milk, pumpkin, pumpkin pie spice, and creamer in a saucepan over medium heat.

Stir until warm and smooth (about 1 minute).

Add coffee and stir; pour into a mug.

That was easy! Doesn’t taste exactly like the Bux version, but it’s definitely tasty in its own right. Plus, canned pumpkin is healthier than pumpkin-flavored syrup. And, oh, it doesn’t cost $5 a cup. It costs maybe $5 a week.

I made this for my post-run snack today! I ran 6 miles and it was the first run where I could actually see my breath. But it’s a gorgeous fall day, so I can’t complain. Besides, it was a perfect excuse to come home and whip up this toasty little drink. My daily cup of coffee is definitely getting a new look for fall!

Mmmm delicious! I have enjoyed my first (probably last) sugary expensive pumpkin spice latte of the season and am definitely going to have to start whipping them up at home!!
