Hump Day Treat: Dark Chocolate Peanut Butter No-Bake Cookies

Happy Wednesday! In keeping with our theme, today’s Hump Day Treat features dark chocolate! I wanted to use dark chocolate since it has the antioxidants I talked about yesterday, and I was on a mission to find a way to put it in no-bakes because it’s a busy week as I get ready for the ACE exam. Quite honestly, I’m not in the mood to deal with pre-heating and an electric mixer as I attempt to re-learn to do long division to figure out percentages by hand (harder than you’d think…so much harder) and what to do if someone’s limb is torn off right in front of me (that chapter…made me want to vom).

When I came across this recipe, I knew it was a winner. (It’s three generations old!)

Ingredients

(Makes 20 cookies)

1/2 stick unsalted butter

3/4 cup granulated sugar

1/4 cup skim milk or soy milk

1/4 cup creamy peanut butter (the Smucker’s made a triumphant return!)

1.5 cups + 2 tbsp quick-cooking oats

1 teaspoon vanilla

2 Tablespoons Hershey’s Special Dark Cocoa

This stuff is great! It’s relatively new, has just 5 calories per tablespoon, and is 100 percent cacao. You can put it in smoothies and oatmeal (!!) too. Sexy!

Method

In a large saucepan, combine butter, sugar, cocoa, and milk.

Over medium-high heat, cook the mixture until it boils; stir constantly. It will start to bubble within a couple minutes.

(It’s sooo dark at this point! I got a little turned on.)

Remove heat. Add peanut butter, vanilla, and oats.

Stir well to combine all ingredients.

Drop it like it’s hot (because it will be) on waxed or parchment paper. (I forgot to use paper. They came off fine with a spatula.) The cookies should be small — about a teaspoon of batter per cookie. Flatten with back of fork to create 1/4-inch patties.

Let cool 15 minutes in the fridge.

Look at that dark little guy! My mom came over to investigate when they were done. “It’s funny how dark they are!” she said.

“Is that what you said when I was born?” I asked.

Then we had a good laugh and TASTED!

The cookies are richer than regular no-bakes, so it’s nice they are small. Still, they aren’t as rich or dark-tasting as I expected, so I think they’ll be a crowd-pleaser. I forgot how amazing no-bakes are. They are heavenly!

I told my family not to eat them with milk, since the milk cancels out all the healthy properties of the dark chocolate! I was told the butter and sugar probably cancels out the healthy properties too. Touche. So get your milk on if you want!

Look AMAZINGLY yum. Do you have any idea approximately how many calories they would be each?
Most likely a treat still I’d imagine :)

Ahhh didn’t I say I’d had enough math for today!? Just kidding. I did a little math (WITH a calculator, thank God)…about 100 calories per cookie!
