Good morning! I hope your weekend is going swimmingly.
Something about Sunday mornings makes me want a breakfast that’s a little more special. However, going out to brunch every weekend in NYC–the trendy thing to do, one that left me broke and fat–is not a realistic weekly option. But that doesn’t mean you can’t create a delicious healthy breakfast in your own kitchen.
This recipe is based on one I found from Hungry Girl. Her recipes are great, but they often involve artificial sweeteners, so I modified it a bit. I also added some healthy things into the recipe: PB for fat and flavor and yogurt for protein and calcium.
If you’re having a sleepover, double the recipe and enjoy breakfast in bed. Once you have the basic recipe down, feel free to modify it as you see fit! Mix up your fruits, try a different yogurt, or top with slivered almonds instead of peanut butter. Our bananas were green as the grass, so unfortunately I had to make it without. No worries. You pretty much can’t go wrong!
Lazy Sunday French Toast (serves one)
3 slices light whole grain bread (usually with 35 calories per slice) OR 2 slices standard whole wheat bread
1/3 cup Egg Beaters or egg whites, beaten
1/2 tsp cinnamon, divided
1/4 tsp vanilla extract
1/4 c plain yogurt (I used Greek for extra creaminess)
1/2 tbsp plus 1 tsp nut butter
1 small banana, sliced
1 tbsp maple syrup
Mix egg whites, 1/4 tsp cinnamon, and vanilla extract in a shallow bowl.

Drag bread through egg mixture on each side so it is coated. Put bread on hot nonstick pan.

Cook bread until egg becomes golden, 2-3 minutes on each side. The cinnamon will start to smell really yummy as it cooks!
Remove bread from heat. Spread first slice with 1/2 tbsp peanut butter and half the sliced banana. Place next piece of bread on top and spread yogurt on top.

Stack the third piece of bread on top and spread with remaining tsp of peanut butter, sliced banana, and sprinkle with the rest of the cinnamon.
Slice and drizzle with maple syrup.

Enjoy in bed with a cup of coffee and the NY Times Weddings & Celebrations section as I like to do. Mmmmmm. Feel better knowing that even if you never get married, at least you can cook.
