Good afternoon!! Happy Hump Day!
I am very happy it’s Wednesday because it meant tomorrow is an “off” day and I am definitely ready for a break.
I got up early today to hit Harry’s Spinning class, and I decided to fuel up with some extra carbs, just to be on the safe side. The NY Times Well Blog had a post this week about pre- and post-workout snacks, so I kept those tips in mind. I modified my smoothie recipe slightly and made it with frozen banana, half a scoop of vanilla protein powder, and kefir. Then I had a slice of toasted sprouted grain bread topped with Naturally More PB.

This seems to be a magic combo! I wonder if next time I could do the toast and PB before the class and the smoothie after to recover faster. I think I’ll try it Friday.
Harry was handsome in his red cycling gear today and seemed to have the need for speed. I was slow when we started warming up, but after a few minutes, I was ready. We did a lot of power sprints and jumps and he had us race each other in pairs. It was supposed to be a 45 minute class but it definitely passed the hour mark–I peaced out after 50 minutes because I knew my mom was waiting for me.
For lunch I made last night’s Yogurt Chicken into a salad! I put the leftover pilaf right into the salad, because I’ve read a lot of tips suggesting that you do that. Then I added chicken, chickpeas, green peppers, red onions, and chopped cucumber, and topped it with flax seed oil and apple cider vinegar.

It was great! That pilaf is so flavorful, it really gave the salad a lot more flavor. I have been working really hard on using up my leftovers, so this is another good way to do it.
I am looking forward to a quiet afternoon. I am off to study and I am meeting up with my twin friends tonight for a drink and some catching up!
