Another day, another meal courtesy of Trader Joes!
I picked up the ingredients for this salad this week and decided instead of making it for dinner, it was perfect for a lunch. So few ingredients, and so easy. You can make it for a side dish, or add cubed tofu or chicken to make it a complete meal-in-a-salad.
Ingredients
2 cups broccoli florets

1 bag broccoli slaw

1 jar TJ’s Satay Peanut Sauce

Optional ingredients: 1 bag golden raisins, 1 cup chopped bell peppers, cubed tofu or chicken
Instructions
Boil enough water to cover the broccoli. Add broccoli to pot and let boil for about 3 minutes, or until tender. Immediately drain in a colander and rinse with cold water for about a minute until the broccoli becomes cool. Mix the broccoli, slaw, and entire jar of peanut sauce gently (and any additional ingredients), until the veggies are coated.

This is a great dish to make for a picnic or potluck because you can prepare it ahead of time and let it chill in the fridge. The peanut-broccoli combination makes it a great side dish for an Asian-inspired meal as well. I love it because it tastes fresh, is filling, and is low in calories (1/4 the recipe has about 150 calories).
To round it out for my lunch today, I grilled some chicken to have with it (all by myself and I did not burn down the house!!)

And had it with some cantaloupe and watermelon!

Possibly the easiest lunch ever!
